Our story

Three questions that hold up a table.

Casa Maíz was born from a journey through the markets of Sololá, the cacao farms of Alta Verapaz and the salt flats of Sacapulas. Every dish answers the same question: where does the corn come from, who grows it, how did people cook it before us? The kitchen works with producers we know by name — no middlemen, no shortcuts.

We serve a seven-course tasting menu that shifts with the harvest. We don't imitate other places' cooking; we study our own, with respect and curiosity. Fire, comal and molcajete are tools, not decoration.

Before you arrive.

What is the cancellation policy?

Free cancellation up to 24 hours before your booking. After that we charge 50% of the tasting menu per person.

Do you accommodate special diets?

Yes — vegetarian, gluten-free, and most allergies are accommodated with 24h notice. Mark your preference when booking.

Can children come?

Welcome from age 8. We offer a shorter tasting menu (4 courses · Q 380) for younger guests.

Is there a dress code?

Smart casual. No athletic shorts or beach sandals. Beyond that, dress as you like.
